Monday’s Motivation


Hello Spring indeed!

Here in the Pacific Northwest we’ve really had an amazing end of winter/beginning of spring.  It’s been unusually warm and sunny.  It’s truly been glorious!  I know not everyone has, and ….I’m sorry!  It’s coming, I promise!

What is spring to you?  To me it’s when I try and do some “spring cleaning”, rejuvenate something …… a time of refreshing and turning a new leaf.  Redecorate a bit, bringing in some springy colors…… Planting a new flower bed.   Depends on the year but it’s a time of refreshment.

Do you need refreshment?  We all do periodically or we get stale!  Do you ever feel stale?  I sure do!!  This week, why not make plans to do something to refresh yourself or your surroundings?  It’s GOOD to take the time to do that.  What am I going to do you ask…… Well I wish I had something more exciting to tell you, I’m going to work on painting my garage, getting storage units built and installed.  Not very glamorous but I love organizing and my garage has been LAST priority after moving last year, it’s time!  Even though it’s not glamorous it will be refreshing to have that all done.  Ask me how I’m doing in about a month (mine will be longer than a weeks project)!

How was your Easter?

Spring is a time of re-birth and new beginnings.

As many of you know I’ve moved recently and it’s been fun to walk around the yard and see what’s new!  There’s something new every time I “take the walk”.  New buds opening on a shrub, a perennial poking it’s head out of the ground and yesterday, a bird nest!  I LOVE flowers so seeing all that’s new (to me) around here has been lots of fun.

Easter is the celebration of new life in Christ.  The fact that God loves us enough to sacrifice his Son on a cross always amazes me!  I know I’m not worthy but he loves me THAT MUCH!  I am so grateful for the unconditional love He shows me.  He’s the only one that will never let me down, never leave me and will always be by my side, guiding and loving me (no matter what).

What do you love about Spring?

Lemon, White Chocolate Cake

Spring is the perfect time for a yummy lemon cake!  My daughter in law developed this recipe and I thought I’d share.   It’s moist, lemony yumminess has become a family favorite.  Even better……it’s simple and fast to make!

1 lemon cake mix

2 eggs

small lemon instant pudding mix

1 3/4 cup of milk

1 white chocolate baking bar


Preheat oven to 350.

Mix the instant pudding with the milk.  Set aside.

Lightly mix the eggs into the cake mix with an electric mixer.  Add pudding mixture and beat until smooth.

Grate the white chocolate bar into the batter and stir.

Pour batter into a well greased bundt cake pan.

Bake @ 350 for 45 – 55 minutes.  Use the toothpick test to check doneness.

Once done and removed from the oven, let set for 15 minutes and then remove from pan.

Top the cake with lemon frosting or sprinkle with powered sugar.  On the cake pictured I used lemon frosting, thinned with a little milk.  I blopped it along the top edge and it ran down the sides.  Of course you can frost in as normal also.


Lemon Frosting

1/3 cup soft butter

3 cups powdered sugar

1 1/2 teaspoons lemon juice

2 tablespoons milk


Mix sugar into butter, stir in lemon juice and milk.  Beat until creamy.  Add one to two more tablespoon of milk if you want a frosting that will flow down the sides.

Note ~ the intensity of lemon flavor can be adjusted by replacing some of the milk with lemon juice if you’d like a zippier flavor.
